    Day 18 - BC Demo & Practical

    Demo:
    - salade nicoise (mixed vegetables with tuna, anchovies, hard boiled eggs and olives served with a lemon and garlic dressing)
    - salade francillon (potato and mussel salad served with a white wine dressing)
    - frisée aux lardons (sauté pork belly with croutons and chicory)
    - salades des nonnes (rice and chicken salad with black truffles served with a lemon cream dressing)

    Practical:
    - salade nicoise

    Day 17 - BP Demo & Practical

    Demo:
    - Moka cake (white genoise with coffee buttercream and coffee flavoured sugar syrup)
    - Mexician cake (chocolate genoise with chocolate ganache topped with white fondant)
    - Black Forest cake (chocolate genoise with kirsch cherries and chantilly cream)

    Day 16 - Pastry Demo & Practical

    Demo:

    - pithiviers (puff pastry filled with almond cream)
    - chaussons aux pommes (apple turnovers)
    - bichons (puff pastry with pastry cream)
    - feuillantine (puff pastry cookies filled with raspberry jam)
    - galette des rois (King's cake)
    - millefeuille (this is my favourite dessert - it's three layers of puff pastry with pastry cream filled in between)
    - palmiers (puff pastry biscuits - this is basically butterfly cookies)
